Ingredients

  • 1 package frozen amla
  • 2 green chilies
  • ½ cup mustard oil
  • 1/8 teaspoon asafetida
  • 1 teaspoon cumin seeds, roasted and powdered
  • 1 teaspoon carom seeds (ajwain), roasted and powdered
  • 1 teaspoon turmeric powder
  • 1 teaspoon fennel seeds, roasted and powdered
  • 1 teaspoon coriander, roasted and powdered
  • 1 tablespoon red chili powder
  • ¼ cup lemon juice (optional, if the gooseberry is not sour)
  • Salt to taste

Directions

  • Air fry the frozen gooseberries at 350°F for 10 minutes.
  • Cut the gooseberries in half and remove the seeds.
  • Heat 2 tablespoons of oil in a saucepan, then add the asafetida and gooseberries.
  • Add all the spices, salt, and mix well. Turn off the heat. Once cooled, transfer the mixture to a 16 oz jar. Add the lemon juice if using.
  • Heat the remaining mustard oil and add the chilies. When the oil starts smoking, remove it from the heat and let it cool.
  • Pour the oil into the gooseberry mixture and mix well.
  • Refrigerate the pickle.
