Ingredients

  • 2 cups all-purpose flour
  • 1 stick softened butter
  • 1 cup almonds
  • 1 cup pitted dates
  • ½ cup raisins
  • ½ cup milk
  • ¼ cup poppy seeds
  • ¾ cup shredded dry coconut
  • 2 cups oil for frying

Directions

Prepare Filling (can make it 1 week in advance)

  • Blend dates, almonds and poppy seeds with milk into a paste.
  • Add raisins, powdered cloves, coconut and brown sugar.
  • Keep the mixture on low heat and stir until it leaves the sides of the pan, approximately 45 minutes – it turns reddish brown.
  • Add cardamom powder at the end.

Dough

  • Mix all-purpose flour, salt and butter in a bowl.
  • Make a stiff dough using as little water as possible.
  • Knead well, cover the dough with a wet towel for 1 hour.

Making the Kadabu

  • Make small balls about ¼ the size of a lemon.
  • Roll each portion into a circle of 5 inches in diameter.
  • Place 1 tablespoon of the filling in the center and seal the edges using a little water.
  • Use a kadabu mold or shape it by hand.
  • Prepare 5–7 kadabu.
  • Preheat oil in a pan and deep fry the kadabu until golden brown.
  • Remove from the pan and let it cool before storing in a tight container.
