Sweet Seedai
Ingredients
- ½ cup rice flour/idiyappam flour
- ½ tbsp roasted urad flour
- ½ tbsp softened butter
- ½ tsp sesame seeds
- 1 tsp grated coconut
- ¼ cup + 1 tbsp powdered jaggery
- ½ tsp cardamom powder
- Water as needed
- Cooking oil for frying
Directions
- Dissolve the powdered jaggery in a little water.
- Mix all the dry ingredients together and then add the unsalted butter and mix.
- Add the jaggery water to the dry mixture and mix to form a soft dough.
- The dough should not be too tight but pliable enough to make soft round balls.
- Make round balls of the dough the size of big marbles. Keep them slightly loose. Small cracks are okay, as they help release moisture from inside the balls.
- Let the balls (seedai) rest for 20 minutes so the extra moisture is absorbed.
- Heat oil and fry a few balls at a time over low-medium heat.
- Fry until evenly browned on all sides.
- Continue frying until they turn a deep brown color so they are cooked well inside.
- Drain on a paper towel, cool completely, and store in an airtight container.
