Date Nut Bars
Ingredients
- 10–12 Medjool dates
- 1½ cups assorted nuts
- ¼ cup goji berries
- 1 cup dark chocolate chips
Directions
- Use a combination of pistachios, almonds, cashews, and walnuts.
- Toast each type of nut separately in the microwave in 30-second intervals, for about 2 minutes or less.
- Remove the pits from the Medjool dates and add them to a food processor or blender along with the toasted nuts and goji berries.
- Pulse a few times until the mixture forms a coarse, cohesive blend.
- Flatten the date and nut mixture onto a clean Teflon baking sheet, shaping it into a rectangle of your desired thickness.
- Melt the chocolate chips over low heat until smooth and glossy, then spread the melted chocolate evenly over the nut mixture.
- Use the back of a fork to create any desired pattern on the chocolate.
- Refrigerate for a couple of hours, or until fully set.
- Cut into bite-sized bars and serve.
