Mango Mousse

Ingredients

  • 2 cups mango puree (canned)
  • 1 cup water
  • 2 tsp agar agar powder
  • 1/2 cup refrigerated coconut cream/milk
  • 4 tbsp agave syrup
  • 1/4 cup orange juice
  • Juice of 1/2 lime
  • 1/4 tsp cardamom powder
  • 2 tbsp diced apricots
  • 2 tbsp raisins

Directions

  1. In a saucepan, bring the water to a boil.
  2. Add the agar agar powder and stir until completely dissolved, about 2–3 minutes.
  3. Reduce the heat and add the mango puree and agave syrup. Cook until the mixture thickens slightly.
  4. Add the refrigerated coconut cream (the thick cream separated from the liquid), orange juice, and lime juice. Stir well.
  5. Cook for another 1–2 minutes, then remove from the heat.
  6. Stir in the cardamom powder.
  7. Prepare ramekins or dessert molds.
  8. Add a teaspoon of diced apricots and raisins to each ramekin, then pour the mango mousse mixture over them.
  9. Refrigerate for a couple of hours, or until the mousse is fully set.
  10. Fresh diced mango can be used instead of apricots if preferred.
  11. Unmold (if using molds) and serve chilled.
