Jackfruit Halwa
Ingredients
- 2 cups cut jackfruit
- 2 cups jaggery/brown sugar
- 1 tsp ghee
- 2 cups water
Directions
- Heat 1½ cups of water and once hot, add the finely cut jackfruit. Cook for 3–5 minutes, covered, until it is soft to touch.
- Strain the water and keep the jackfruit aside.
- Heat the jaggery with ½ cup water (or a little more) until it dissolves. Strain the jaggery syrup to remove any impurities, then bring it to a boil.
- Cook the syrup until it reaches a soft ball consistency (when a drop placed in water does not dissolve and can be rolled into a ball with your fingers).
- Add the cooked jackfruit and sauté continuously, stirring constantly to prevent burning, until the mixture thickens to a halwa consistency.
- Add 1 tsp ghee and continue sautéing until the mixture leaves the sides of the pan. Switch off the flame and serve.
