Khajur Badam Kadubu
Ingredients
- 2 cups all-purpose flour
- 1 stick softened butter
- 1 cup almonds
- 1 cup pitted dates
- ½ cup raisins
- ½ cup milk
- ¼ cup poppy seeds
- ¾ cup shredded dry coconut
- 2 cups oil for frying
Directions
Prepare Filling (can make it 1 week in advance)
- Blend dates, almonds and poppy seeds with milk into a paste.
- Add raisins, powdered cloves, coconut and brown sugar.
- Keep the mixture on low heat and stir until it leaves the sides of the pan, approximately 45 minutes – it turns reddish brown.
- Add cardamom powder at the end.
Dough
- Mix all-purpose flour, salt and butter in a bowl.
- Make a stiff dough using as little water as possible.
- Knead well, cover the dough with a wet towel for 1 hour.
Making the Kadabu
- Make small balls about ¼ the size of a lemon.
- Roll each portion into a circle of 5 inches in diameter.
- Place 1 tablespoon of the filling in the center and seal the edges using a little water.
- Use a kadabu mold or shape it by hand.
- Prepare 5–7 kadabu.
- Preheat oil in a pan and deep fry the kadabu until golden brown.
- Remove from the pan and let it cool before storing in a tight container.
