Ingredients

  • 2 pounds Okra, cut into small pieces
  • 1 sweet potato
  • 3 tablespoons fresh tamarind paste
  • ½ teaspoon turmeric paste
  • ½ teaspoon brown sugar
  • ½ cup fresh grated coconut
  • 2 teaspoons hot red chili powder
  • 1/8 teaspoon powdered fenugreek
  • ¼ cup oil
  • ½ bunch of cilantro to garnish
  • ½ teaspoon mustard seeds
  • Pinch of asafoetida

Directions

Prepare Masala:

  • Grind coconut, fenugreek, red chili powder, turmeric and tamarind paste with water.

Prepare the Okra

  • Cook Okra in the oven at 350 degrees for 10 minutes so that the water is removed.
  • Simultaneously heat a pan on medium heat.
  • Add oil, mustard seed & asafoetida. Let mustard seeds split.
  • Add sweet potato and let it brown.
  • Add cooked okra and let cook for another 2 minutes.
  • Add the ground masala to the pan and let it cook for 5 minutes.
  • Add water if necessary to make it liquid.
  • Garnish with cilantro leaves.
