Green Beans Parpu Usili (Beans Lentil Curry)

Ingredients

  • ¾ cup Toor dal
  • 2-4 dry red chillies
  • 2 cups cut green beans
  • 3 tbsp oil
  • ½ tsp turmeric powder
  • Salt to taste
  • ½ tsp mustard seeds
  • 1 tsp urad dal

Directions

  • Soak the toor dal with the red chillies in enough water for at least an hour
  • Grind the soaked toor dal & red chillies with just enough water to a smooth paste
  • Heat 3-4 cups of water in a pan
  • Once the water is hot, add the finely cut green beans and cook covered for 6-8 mins
  • Once the beans are cooked, add the salt & switch off the flame
  • After a minute or so drain the water and keep the beans aside
  • Heat oil in a pan and add the mustard seeds
  • Once they splatter, add the urad dal and roast till golden brown
  • Next add the asafetida and the ground dal paste and saute the dal paste on a medium flame
  • Add turmeric & salt and saute for 6-8 minutes or till the dal
  • Heat oil in a pan and add the mustard seeds

  • Add turmeric & salt and saute for 6-8 minutes or till the dal mixture turns dry and powdery
  • A little extra oil can be added if needed
  • Keep sauteing on a low to medium flame till the dal is crumbly
  • Now add the cooked beans and mix them together and saute for 2-3 minutes
  • This high protein curry goes well with the buttermilk stew & rice
