Microwave Cooked Green Beans/Lentil Curry

Ingredients

  • 2 cups thinly cut green beans
  • ½–¾ cup Gram dal + Toor dal mix
  • 2–4 dry red chillies
  • ¼ tsp asafetida
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • 1 tsp urad dal
  • ¼ tsp turmeric
  • 2 tbsp grated coconut
  • Salt to taste

Directions

  • Wash & soak the dals in around 2 cups of water for at least an hour.
  • Steam the thinly cut green beans till they are soft and tender.
  • Once the dals have soaked, drain the water, add the dry red chillies, grated coconut, turmeric and salt for taste.
  • Blend into a thick course mixture without adding any water or 1–2 tbsps.
  • Take a greased microwaveable pan and add the mixture and flatten into the pan.
  • Microwave on intervals of 3 minutes, taking the pan out and mixing the lentil blend.
  • The mixture cooks and the moisture is also removed.
  • Cook for 10–15 minutes in 3 minute interval cooking in the microwave.
  • Allow the mixture to cool to room temperature and blend the dry lentil mixture till it becomes powdery.
  • Heat the oil in a pan and add the mustard seeds and allow to splatter.
  • Add the Urad dal and allow it to turn golden brown.
  • Next the steamed green beans are added and sautéed for a minute or so.
  • The lentil powder mixture is now added and mixed well with the green beans.
  • The whole mixture is sautéed on a medium flame for a few minutes.
  • Once the lentil powder & the green beans form a cohesive mixture, the curry is ready.
