Misal
Ingredients
- 3 cups mixed vegetables cut (beans, carrots, poblano pepper, turnip)
- 7 oz pizza sauce (I used Rao’s)
- 1 small onion, chopped
- 2 tablespoons dry coconut (copra)
- 1 tablespoon ginger
- 8 garlic cloves
- 1 teaspoon chili powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- Salt to taste
- 4 tablespoons oil
- 1 teaspoon mustard seeds
- ¼ teaspoon asafetida
- Cilantro to garnish
- 1 cup water
Directions
- In a sauce pan, heat the oil and add the mustard seeds and asafetida. Let the seeds splutter.
- Add the mixed vegetables and cook until they are ¾ cooked.
- Add coriander, cumin, garam masala, chili powder and ginger.
- Stir for 5 minutes and switch off the flame.
- In a separate sauce pan, sauté the onion and garlic in 1 teaspoon oil until translucent.
- Add the pizza sauce and dry coconut, then let it cook for 5 minutes.
- Transfer this mixture to a blender and make a smooth paste, or use a hand blender.
- Add this paste to the cooked vegetables and mix well. Add water and let it boil for 5 minutes.
- Garnish with cilantro.
