Plantain Curry
Ingredients
- 2 Plantains
- ¼ cup grated coconut
- 1 teaspoon mustard
- Pinch of asafoetida
- 1 teaspoon urad dal
- 3 red chillies
- 6 tablespoons oil
- Coriander leaf chopped for garnish
- Salt to taste
Directions
- Cut the plantains in half and cook in the pressure cooker for 20 minutes.
- Chop the cooked plantains into small cubes.
- Heat oil in a nonstick pan, add mustard seeds, urad dal and asafoetida, let it splutter.
- Add red chillies to the pan.
- Add cubed plantains and salt, let it roast until it is brown.
- Sprinkle the grated coconut.
- Keep stirring for five minutes and cover the pan, garnish with coriander leaf.
