Plantain Curry

Ingredients

  • 2 Plantains
  • ¼ cup grated coconut
  • 1 teaspoon mustard
  • Pinch of asafoetida
  • 1 teaspoon urad dal
  • 3 red chillies
  • 6 tablespoons oil
  • Coriander leaf chopped for garnish
  • Salt to taste

Directions

  • Cut the plantains in half and cook in the pressure cooker for 20 minutes.
  • Chop the cooked plantains into small cubes.
  • Heat oil in a nonstick pan, add mustard seeds, urad dal and asafoetida, let it splutter.
  • Add red chillies to the pan.
  • Add cubed plantains and salt, let it roast until it is brown.
  • Sprinkle the grated coconut.
  • Keep stirring for five minutes and cover the pan, garnish with coriander leaf.
