Spinach Kootu (Dal)

Ingredients

  • 4 cups cut spinach
  • ⅓ cup grated coconut
  • ½ tsp black peppercorns
  • 1 tbsp urad dal
  • ½ tsp mustard seeds
  • ½ tsp cup cooked yellow moong dal*(¼ tsp uncooked)
  • 1. 5 tbsp oil
  • 2 dried red chillies
  • ½ tsp asafetida
  • ½ tsp  turmeric
  • 1. 5 cups water
  • 1 tsp salt

Directions

  • Boil the water in a pan and add the cut spinach.
  • Cook for about 7–10 minutes.
  • Pulse the cooled spinach in a mixer for a second to make it homogeneous.
  • Heat 1 tbsp oil in a small pan.
  • Add the cooked dal to the spinach mixture and heat.
  • Add salt and turmeric, then cook for about 3–4 minutes.
  • Turn off the flame.
  • Heat ½ tbsp oil in another small pan.
  • Add mustard seeds and allow them to crackle.
  • Add ½ tbsp urad dal and roast until golden brown.
  • Switch off the flame, add ¼ tsp asafoetida, and pour the tempering over the spinach kootu.
  • Serve hot and enjoy
