Zucchi Kofta Curry

Ingredients

  • 1 large onion chopped
  • 5 cloves of garlic
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • ½ cup pureed tomatoes
  • 18 cashews
  • 1 inch ginger grated
  • 1 teaspoon garam masala
  • ½ teaspoon chili powder
  • ¼ teaspoon turmeric powder
  • 2 tablespoons Greek yogurt
  • Salt to taste

Directions

  • In a sauce pan heat ghee on low heat. Add cumin seeds and let it splutter.
  • Add onion and garlic and sauté it.
  • Add tomatoes, cashews, ginger, turmeric, chili powder, garam masala and salt.
  • Mix all the ingredients and keep stirring until the raw smell of the tomatoes are gone.
  • Let it cool, blend all these together.
  • Add a teaspoon of ghee in the sauce pan, pour this blended mixture and cook for five minutes. Add the kofta’s and the Greek yogurt into the sauce.
  • Garnish with cilantro leaves.
