Confetti Mint Parathas
Ingredients
- 1.5 cups whole wheat flour
- 1 cup finely cut fresh mint leaves
- 1 jalapeno finely diced
- ¾ – 1 cup water
- 2 tbsp oil
- ¾ cup finely diced colored peppers
- 1 tsp chilly powder
- ¼ tsp turmeric
- Salt to taste
Directions
- Finely cut the colored peppers and the jalapeno. This is very important to enable the rolling of the dough into discs.
- Wash and cut the mint leaves very finely.
- Take a large bowl and add the wheat flour, salt, chilly powder & turmeric.
- Mix well. Add the mint, jalapeno and the colored peppers.
- Add the oil and mix well.
- Next start adding the water in increments and keep kneading and mixing the dough into a nice pliable dough.
- Roll into small round discs and cook on a griddle on both sides with a little oil.
- The colorful parathas are done when golden brown spots appear on either side.
- Serve hot parathas with curries or just a spiced yogurt or raita.
