Confetti Mint Parathas

Ingredients

  • 1.5 cups whole wheat flour
  • 1 cup finely cut fresh mint leaves
  • 1 jalapeno finely diced
  • ¾ – 1 cup water
  • 2 tbsp oil
  • ¾ cup finely diced colored peppers
  • 1 tsp chilly powder
  • ¼ tsp turmeric
  • Salt to taste

Directions

  • Finely cut the colored peppers and the jalapeno. This is very important to enable the rolling of the dough into discs.
  • Wash and cut the mint leaves very finely.
  • Take a large bowl and add the wheat flour, salt, chilly powder & turmeric.
  • Mix well. Add the mint, jalapeno and the colored peppers.
  • Add the oil and mix well.
  • Next start adding the water in increments and keep kneading and mixing the dough into a nice pliable dough.
  • Roll into small round discs and cook on a griddle on both sides with a little oil.
  • The colorful parathas are done when golden brown spots appear on either side.
  • Serve hot parathas with curries or just a spiced yogurt or raita.
