Ingredients

  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • 2 tablespoon oil (vegetable or olive)
  • 2/3 cup warm water
  • ¼ cup whole wheat flour for dusting while rolling the poori
  • Vegetable oil for deep frying

Directions

Prepare the dough

  • Place the flour in a large mixing bowl.
  • Add salt and oil.
  • Mix the dry ingredients.
  • Add warm water and mix the ingredients, until it adheres together to form a ball (water content varies depending on the type of wheat flour).
  • Knead the dough for 5 minutes and cover and set aside for at least ½ hour.

Prepare the Puris

  • Divide the dough into 20 balls.
  • Roll out each ball, ½ inch thick using minimum dry wheat flour.
  • Heat the vegetable oil to 380 degrees (put a small piece of dough into the heated oil the dough will rise immediately to the surface).
  • Immerse the rolled out poori into the heated oil, frying both sides for 1 minute each.
  • The poori will puff up like a balloon.
  • Remove from oil and let it drain on the tray lined with a paper towel.
  • When cool the poori’s will deflate.
  • All the poori’s can be rolled out before you start deep-frying.
